This is basically summer in a bowl. It’s super delicious… super fresh, tangy and sweet. I worship at the alter of smoothies. I’m not sure why I love them so much, but they just tickle my fancy. I love that you can pack so much goodness into something that tastes SO good (**most of the time – I’ve made a few scary, sludgy ones). If you want to add some extra nutrition into this one: add a big handful of spinach and 2 teaspoons of lucuma or maca powder (you’ll just lose the pretty peachy colour if you add spinach!).
You need a balance of frozen and fresh fruit here, unless you have the world’s most high powered blender in which case you could use all frozen and maybe just add slightly more liquid if needed. I have a love-hate relationship with my blender – I love it because I use it all the time, but I hate it because I’ve had it replaced 5 times 😐
Top the bowl with whatever you like – some extra seeds, granola, fresh fruit.
- 1 cup peach (fresh or frozen)
- 1/2 cup mango (fresh or frozen)
- 1/2 cup coconut water
- 1.5 frozen bananas
- 1 tsp vanilla
Blend all the ingredients until smooth (pack the blender with soft ingredients first), top with fresh passionfruit and more fresh fruit, seeds and nuts etc.
